This Kansas City venue is closing one steakhouse, but another will soon open

Soon, Ameristar Casino’s avid gamblers will have a new dining option to enjoy while taking a break from the thrilling rounds of blackjack. The upcoming addition is a steakhouse that promises to deliver a delectable experience to its patrons.

In just a few weeks, the KC Chop House will be opening its doors in the location previously occupied by the Great Plains Cattle Co. The anticipated mid-November opening has many food enthusiasts eagerly awaiting the arrival of this new establishment.

The restaurant offers more than just seafood dishes. They also have a selection of steak cuts to choose from, including a 40-ounce Long Bone Ribeye, served with their own homemade steak sauce, truffle fries, and chimichurri and bearnaise on the side. Another must-try menu option is the KC Chop House Burger, made with local wagyu beef, black truffle cheese, fried onions, and bacon jam. If you’re looking for a classic, their slow-roasted prime rib, topped with horseradish and velvet au jus is a great choice.

The culinary program will be under the leadership of Chef Crystal Morris, who comes with a wealth of experience in the industry. With previous stints as the executive chef at Capital Grille in Minneapolis and Eddie V’s and Ocean Prime in Kansas City, Chef Morris brings a unique perspective and a refined skill set to the table. Her expertise and passion for creating delectable culinary experiences are sure to elevate the program to new heights.

According to a written press release by Keith W. Henson, the general manager of Ameristar, KC Chop House is a perfect blend of midwestern roots and contemporary charm that will surely please our guests. The restaurant boasts a range of prime, dry-aged, and Angus beef sourced from both local and regional farms, along with an extensive selection of hand-picked wines. We are confident that our guests will appreciate all that KC Chop House has to offer.

At the heart of the menu are the signature cocktails, each with its own unique twist. For those who like a bit of theatrics with their drinks, the tableside cherry wood-smoked Manhattan is a must-try. Another standout favorite is The Dirty Pig, a vodka martini infused with the rich smokiness of bacon and garnished with pimento-stuffed olives and a bacon-dusted rim. To cater to different preferences, wine is served by the glass in three different pour sizes – 3, 6, and 9 ounces.

The dining room and patio of the restaurant have the capacity to host up to 200 guests at a time, while the Prohibition Room, a private party space, can accommodate an additional 50 guests. Overall, the restaurant offers ample space to cater to a considerable number of visitors.

On Wednesday, November 15th, the KC Chop House is set to hold a ribbon-cutting ceremony between 2:45 pm and 4 pm. This exciting event promises to usher in a new era for the restaurant, and the team is gearing up for an unforgettable experience.

Once the KC Chop House opens, The Great Plains Cattle Co. will permanently close its operations inside Sugo, a breakfast restaurant at Ameristar.

KC Chop House will be open for dinner from Wednesdays to Thursdays, from 5 p.m. to 10 pm, and on Fridays and Saturdays from 5 pm to 11 pm.
